If I sign my team's current free agents to $0 contracts and no one bids on one of them, do I get him for $0 for the year? and my "Manage Team" screen indicates I can sign 2 veteran contracts. Is this 2 long term contracts (5 or more years) or 2 total contracts? What I'm asking is...I have 10ish free agents on my team. Could I sign them all to 3 year deals if I have the points? Or is it only 2 and I have to work through waivers/free agency on all the others?

You can't sign your team's current free agents for $0. Have to bid at least $1 for them in free agency or you lose them. Prior to free agency starting, you can only sign two of your veteran players to contracts, and the contract you offer him has to be at least five years in length. Once the free agency period begins, however, you can sign as many of your own free agents as you want for whatever length of contract you want, you just have to bid against other teams to get them.

Good explanation, CincyDan.
